Wine produced in the middle of Salento from Fiano grapes. The harvest is manual when ripe when the acidic and fresh component of the grapes is still intact. In the cellar the grapes undergo a soft pressing and the must ferments at a controlled temperature. The colour is straw yellow, the nose is very floral while the palate is very fresh and mineral.
Food Pairing: Antipasti, raw or cooked crustaceans and light sauces.
