PREPARATION: The classic white wine Piedmont. The Cortese grapes are harvested and vinified immediately in recent weeks September / early weeks of October. The juice is immediately separated from the skins with gentle pressure. The juice obtained after the cold static clarification, is fermented in stainless steel tanks at controlled temperatures between 16 and 18 ° C for 7 to 8 days. Then the wine remains in the tank for clarification, stabilization and filtration. The wine is bottled and released 3 to 4 months later.
