The grapes coming from a single vineyard, a plot historically known as Aratorio della Tesa, are delicately pressed in a closed circuit vacuum press in the absence of oxygen and at a controlled temperature. The must is clarified by flotation, with the sole use of nitrogen. The fermentation in steel barrels and the subsequent permanence on the yeasts express a variety of aromas of tropical fruits such as banana, mango and apricots. The taste is elegant, very balanced fruity with a persistent aftertaste reminiscent of acacia flowers. When aged the bouquet evolves into hints of toasted almond and straw.
