In the last few years, the “Stilio” wine has been added to the production. From selected grapes in low yield vineyards in the Manduria area. A part of the grapes that takes part in the production of this wine undergoes a slight drying in the plant. This allows to concentrate the aromas before harvesting thanks to a slight dehydration and consequent water loss of about 20-30%. A reference to the ancient Salento cultural tradition of the taranta, rediscovered in recent years. On the label a stylized diadem spider, on a black field. The label displays the symbolism of the spider, of the taranta, whose bite generates the need to dance, with music and colors in a cathartic effect, liberating emotions, which the taste of this wine evokes.
Wine-making Technique:
Traditional maceration for 10-12 days and fermentation of must under controlled temperature conditions, using delestage and pumping over. Malolactic fermentation.
Ageing: A part of the wine 6 months in French oak barrels first and second passage
Food Match: Grilled red meats, stews and aged cheeses.
Recommended Glass: Grand Cru
Serving Temperature: 18-20 degrees C
