When the Descombes took over the estate, in 2017, they switched their sights to producing quality winey – focusing on the environmental conservation of their coveted Burgundy plots. They’ve even gone as far to plant hedges and trees and use natural fertilisers in the vineyards. This is their Petit Chablis, and it has all the classic flavours you’d expect: lemon and grapefruit, and a textbook lick of minerality. Enjoy it with salmon tartare.
Each plot is vinified separately. This technique enables their wines to enhance the characteristics of the terroir where it’s from. They strive for a high purity in their wines, and a great balance between acidity and roundness.
COLOUR: Pale gold.
NOSE: Expressive, fresh and mineral, with citrus notes.
PALATE: Fresh wine, well-structured, nice fruity finish.
FOOD MATCHES: Seafood, oysters, fish, goat and ewe cheese.
Serve at 50-55 F
