On the palate it has lots of fruity layers such as cherries and blackberries, with good acidity and medium tannins. It has a smooth and distinct mouth volume that is harmonious and elegant. Red fruit starts to develop to some cinnamon and light pepper but always keeping the elegance of freshness.
Drink at 18°C.
Food Match:
Great with Indian and Chinese cuisine. Ideal with matured cheese, grilled meats (white or red) and nut roasts.
The Dao region is well known for the deep, savoury, well structured reds, composed mainly from Touriga Nacional. Here we have a serious wine for organic lovers that really expresses the unique character of the Dao mountains. The grapes are crushed after destemming followed by a long and smooth skin maceration and fermentation at 26 °C. This is then followed by 2 months of cuvaison and 6 months of battonage on fine lees of the Touriga Nacional. Finally 18 months in stainless steel and at least three months in the bottle. It never sees oak at any stage.
