The high acidity gives freshness and persistence and it makes it perfect as an aperitif in a summer evening.
The ideal service temperature is 8 – 10 °C.

The ideal to taste without anything to eat, or matched with sea and vegetables appetizers, seafood, fried fish and vegetables.
Fermentation & Ageing:
From a soft pressing we obtain the must that we let cool off for 24 hours to help its natural sediment. The clear part is taken and fermented in stainless steel tanks with a monitored temperature of 16°C. Further ageing in steel tanks.
